{"id":8681,"date":"2023-09-19T09:56:57","date_gmt":"2023-09-19T12:56:57","guid":{"rendered":"https:\/\/queijosnobrasil.com.br\/site\/?p=8681"},"modified":"2025-05-05T16:08:23","modified_gmt":"2025-05-05T19:08:23","slug":"regulamento-tecnico-doce-de-leite","status":"publish","type":"post","link":"https:\/\/queijosnobrasil.com.br\/site\/regulamento-tecnico-doce-de-leite\/","title":{"rendered":"Regulamento t\u00e9cnico doce de leite"},"content":{"rendered":"<h2><span style=\"font-family: verdana, geneva, sans-serif; color: #00ccff;\">REGULAMENTO T\u00c9CNICO DOCE DE LEITE<\/span><\/h2>\n<p><span style=\"font-family: verdana, geneva, sans-serif;\"><strong>\u00a0<\/strong><\/span><\/p>\n<ul>\n<li>\n<h3><span style=\"font-family: verdana, geneva, sans-serif; color: #00ccff;\">ALCANCE<\/span><\/h3>\n<ul>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">OBJETIVO: Estabelecer a identidade e os requisitos m\u00ednimos de qualidade que dever\u00e1 cumprir o Doce de Leite destinado ao consumo humano .<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">\u00c2MBITO DE APLICA\u00c7\u00c3O: O presente regulamento se refere ao Doce de Leite a ser comercializado no MERCOSUL.<\/span><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h3><span style=\"font-family: verdana, geneva, sans-serif; color: #00ccff;\">DESCRI\u00c7\u00c3O<\/span><\/h3>\n<ul>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">Entende-se por Doce de Leite o produto, com ou sem adi\u00e7\u00e3o de outras subst\u00e2ncias aliment\u00edcias, obtido por concentra\u00e7\u00e3o e a\u00e7\u00e3o do calor a press\u00e3o normal ou reduzida do leite ou leite reconstitu\u00eddo, com ou sem adi\u00e7\u00e3o de s\u00f3lidos de origem l\u00e1ctea e\/ou creme e adicionado de sacarose (parcialmente substitu\u00edda ou n\u00e3o por monossacar\u00eddeos e\/ou outros dissacar\u00eddeos).<\/span><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h3><span style=\"font-family: verdana, geneva, sans-serif; color: #00ccff;\">CLASSIFICA\u00c7\u00c3O<\/span><\/h3>\n<ul>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">De acordo com o conte\u00fado de mat\u00e9ria gorda, o Doce de Leite se classifica em:<\/span>\n<ul>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">Doce de Leite<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">Doce de Leite com Creme<\/span><\/li>\n<\/ul>\n<\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">De acordo\u00a0 com\u00a0 a\u00a0\u00a0 adi\u00e7\u00e3o\u00a0 ou\u00a0 n\u00e3o\u00a0\u00a0 de\u00a0 outras\u00a0\u00a0 subst\u00e2ncias aliment\u00edcias se classifica em:<\/span>\n<ul>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">Doce de Leite ou Doce de Leite sem adi\u00e7\u00f5es<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">Doce de Leite com adi\u00e7\u00f5es<\/span><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\"><span style=\"color: #00ccff;\">DESIGNA\u00c7\u00c3O (DENOMINA\u00c7\u00c3O DE VENDA):<\/span> A denomina\u00e7\u00e3o Doce de Leite est\u00e1 reservada ao produto em que a base l\u00e1ctea n\u00e3o contenha gordura e\/ou prote\u00edna de origem n\u00e3o l\u00e1ctea.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">O produto que corresponda \u00e0 classifica\u00e7\u00e3o 2.2.2.1. se denominar\u00e1 \u201cDoce de Leite\u201d<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">O produto que corresponda a classifica\u00e7\u00e3o 2.2.2.1 que tenha sido adicionado de aditivos espessantes\/estabilizantes e\/ou umectantes autorizados no item 5.1.1. do presente Regulamento, se denominar\u00e1 \u201cDoce de Leite para Confeitaria\u201d.<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">O produto que corresponda a classifica\u00e7\u00e3o 2.2.2.2. adicionado de cacau, chocolate, am\u00eandoas, amendoim, frutas secas, cereais e\/ou outros produtos aliment\u00edcios isolados ou misturados e que tenham sido adicionados ou n\u00e3o de aditivos espessantes\/estabilizantes e\/ou umectantes autorizados no \u00edtem 5.1.1. do presente Regulamento, denominar-se-\u00e1 \u201cDoce de Leite com&#8230; \u201dpreenchendo o espa\u00e7o em branco com o (s) nome(s) do(s) produto(s) adicionado(s). Poder\u00e1 opcionalmente denominar-se \u201dDoce de Leite Misto\u201d.<\/span><\/li>\n<li><span style=\"font-size: 12pt; font-family: verdana, geneva, sans-serif;\">Os produtos mencionados nos \u00edtens 2.3.1., 2.3.2. e 2.3.3. poder\u00e3o denominar-se \u201cDoce de Leite para Sorveteria\u201d ou \u201cDoce de Leite para Sorveteria com &#8230;&#8230;&#8230;\u201dsegundo corresponda e quando forem destinados a elabora\u00e7\u00e3o de sorvetes. Esta denomina\u00e7\u00e3o de venda ser\u00e1 obrigat\u00f3ria quando os produtos mencionados no presente inciso, tenham sido adicionados dos corantes inclu\u00eddos no \u00edtem 5.1.1.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">Em todos os casos, nas denomina\u00e7\u00f5es mencionadas nos \u00edtens 2.3.1., 2.3.2. e 2.3.3., indicar-se-\u00e1 \u201cCom Creme\u201d, segundo corresponda a classifica\u00e7\u00e3o 2.2.1.2. e 4.2.2.<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h3><span style=\"font-family: verdana, geneva, sans-serif;
